Sara's Own Basil-Tomato Sauce

In a cast iron pan, sauté onion slowly until translucent.  Add tomatoes and bouillon and simmer ¼ of the mix away.  Add all the fresh herbs and garlic and simmer 20 to 30 minutes more.  Add tomato paste if thicker sauce is desired.  Tastes best if allowed to sit in the fridge overnight.  Freezes very well.

Ingredients

  • 1 large onion, chopped
  • 2 TBS olive oil
  • 3-4 cups fresh basil leaves, chopped
  • ¼ cup fresh oregano leaves, chopped
  • fresh rosemary from a 6" sprig, chopped
  • 1 TBS fresh thyme
  • ¼ cup flat leaved parsley, chopped
  • ½ to 1 whole garlic bulb minced
  • 28 oz can of tomatoes, chopped
  • ¼ can tomato paste (optional)
  • 1 cup chicken bouillon
